Maybe they were put into the "unvaccinated" category if they didn't get boosters, as they would be recategorised as not up to date?

Good thought, but doubt it. By using # of doses instead of the fraudulent “not for 2 weeks” and “not FULLY” the data are cleaner. NHS data from early 2021 showed a lower infection rate but 8x higher death rate in the shot group. Scroll down to Figure 1:

Of course, this as early before antibody levels waned.

I am wondering if it’s because the higher rate of deaths in one time vaccinated individuals eliminated many of those that were vulnerable to acute harm from the shots. And then with the multiply vaccinated, the cumulative affect eventually harmed those with initial resistance to the harms of the shots.
